Plantation Fruitcake

INGREDIENTS
2 cups raisins
1 can 16 oz of drained and chopped peaches
1 cup veg. shortening
1 cup firmly packed brown sugar
1 cup cream sherry or orange juice
16 oz. of mixed chopped candied fruits
2 cups chopped walnuts
4 eggs, beaten
2 1/2 cups sifted all purpose flour
1 teaspoon baking powder
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 cup light corn syrup
HOW TO
Grease pan with syrup and dust with flour. Combine raisins, peaches,
shortening, brown sugar, sherry or o.J. In a saucepan. Heat to just boiling,
remove from heat and let cool. Add fruits and nuts to cooled mix, stir in
beaten eggs. Sift flour, baking powder, salt, cinnamon, cloves togather. Stir
into fruit mix, put into pan and cook at 300 degrees F for 2 hrs.
I changed the recipe slightly. I used a can of fruit cocktail w/juice and
eliminated the OJ. Not having candied fruit mix, I substituted an 18 oz.
container of dried fruit and nut mix. Everything else as per recipe. Came out
real good. Nice and moist. Eating some of it now as I type. Hope this helps the
